Banana Oat Pancakes

Who knew that you could make pancakes without traditional eggs and flour?!


As the name suggests, the base for these pancakes are made with Oats, two very ripe Bananas for its natural sweetness, good quality EVOO for some healthy fats and a hint of Vanilla for some flavour. This can be whipped together either in your food processor, blender or Magic Bullet.


Serve this as a luxurious Weekend morning breakfast, or a Weekday "breakfast for dinner" meal... who said that pancakes had to only be eaten in the AM? *wink wink*

Banana Oatmeal Pancakes

Yields: 5 medium-small pancakes
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

Ingredients & Utensils

Oatmeal Pancake Batter 

1 Food Processor/Blender

1 spoon/ladle 

1 cups Rolled Oats 

2 very ripe Bananas (this is the secret sweetner)

1/2 cup Milk 

1/4 cup Cooking Oil (I using EVOO)

1/2 teaspoon Vanilla Essence 

1 teaspoon Pumpkin Spice Mix (optional)


Making the Oatmeal Pancakes

1 Non-stick skillet 

1 flat silicon/wooden spatula 

1 tablespoon (for scooping the Oatmeal batter) 

1 teaspoon (for cooking the Pancakes)


Toppings (optional)

Greek Yogurt

Mixed Berries

Real Canadian Maple Syrup  

Let's Get Cooking!

1. In a Food Processor/Blender combine the Oats, Bananas, Milk, Oil, Vanilla Essence and optional Pumpkin Spice Mix and blend all ingredients together. You may need to use a spoon/ladle to scrape down the sides of your Food Processor/Blender.


2. Once the Oatmeal Pancake Batter comes into a "Banana Bread Batter-like" consistency you'll want to place a Non-stick skillet on the stove-top to a medium-high heat/flame. Adjust the stove-top temperature as you are cooking your pancakes.


3. Splash 1 tablespoon of water in your Non-stick skillet and allow the water to sizzle. Once all of the water evaporates, dollop 2 tablespoons of the Oatmeal Pancake Batter in the middle of your Non-stick skillet. You want to form them into somewhat round circles. *perfection is not the point with these pancakes* Then, take a teaspoon of water and drizzle it around the circumference of the pancake. The water will bubble and form a crisp edge around the pancake.


Cooking Tip: At the CTD's HQ, we have noticed that these pancakes taste better when made in medium-small sizes as opposed to traditional large sized pancakes.


4. After about 2 minutes, with your spatula, gently lift up the edges of the pancake and flip it. This way, the alternate side can cook. 


Cooking Tip: You may want to adjust your stove-top flame/heat depending upon how the cooked-side looks. 


5. Once again, drizzle a teaspoon of water around the circumference of the pancake. Continue to cook the pancake, until both sides are nicely cooked. Then plate this pancake and repeat these steps until all of the batter is complete.


Cooking Tip: If you have a small amount of batter left, you can also make a mini-pancake!


6. Serve your homemade Banana Oatmeal Pancakes with optional toppings like fresh Greek yogurt, mixed berries and even a drizzle of Real Canadian Maple Syrup or honey!

Notes

1. Substitute any ingredient to your dietary needs. 


2. This recipe tastes better as medium-small sized pancakes as opposed to traditional large sized pancakes. 


3. Storage: Store these pancakes in glass container/tupperware using parchment paper, in between, to prevent sticking. When completely cooled, place them in the fridge for up to one week!
