Carrot Halwa Bites (aka Gajar ka Halwa)

This is Day 9 of my 30 Days of Healthy-ish Desserts series! I'm bringing together two of my favourite flavours in an East meets West twist – combining the classic Indian Gajar ka Halwa with the comforting spices of American Carrot Cake. These Carrot Halwa Bites are packed with natural sweetness and warm spices, perfect for a guilt-free indulgence this Diwalloween (Diwali and Halloween) season!

Carrot Halwa Bites (aka Gajar ka Halwa)

Yield: 7-10 medium sized bites or ladoos
Prep Time: 10-15 minutes
Cook Time: 0
Total Time: 10-15 minutes

Ingredients & Utensils

Food Processor/Blender

Spatula or Spoon 

Microwavable bowl 


1 cup Shredded Carrot  

12-15 medium to large-size Medjoold Dates 

1/4 cup Unsalted Roasted Cashews 

6-7 Cardamom Pods (crushed into a powder) or 1 teaspoon Cardamom Powder 

1 teaspoon Pumpkin Pie Spice Mix or Cinnamon Powder 

1/4 cup Unsweetened Dessicated Coconut 

1/4 cup White Chocolate 

1 teaspoon Coconut Oil 


Lets Get Cooking

1. Combine into a food processor or blender: Shredded Carrot, Medjooled Dates and Cashews. Blitz until well incorporated and the mixture becomes a coarse sticky dough. Scrape the sides down with a spatula or spoon if needed. 


2. Add to the food processor Cardamom Powder, Pumpkin Pie Spice or Cinnamon, and Dessicated Coconut. Blend until the mixture clumps around the blade. 


3. Roll into individual balls. 


4. Melt white chocolate and coconut oil in the microwave in 10-second intervals, stirring between each to prevent burning. Alternatively, use the double-boiler method. Drizzle the melted white chocolate over each carrot halwa bite.


If you're making this for a party, garnish with dried rose petals, pistachios, or even edible foil paper for an elegant touch!

Notes

1. Storage: Store in a glass container/tupperware in the fridge for up to 1 week.
