Chocolate Dipped Apricots
Day 13 of my 30 Days of Healthy-ish Desserts features Chocolate Dipped Apricots—a super easy, 2-minute treat! Dried apricots are dipped in rich milk chocolate, then topped with your choice of drizzled white chocolate, crushed nuts, dried rose petals, or sesame seeds. It’s a simple, indulgent dessert with 2.8g of protein in each sweet treat!

Ingredients & Utensils

Microwave-safe Bowl
Tray or Tupperware lined with Parchment paper
Ingredients
1 cup Dried Apricots
1/3 cup Milk Chocolate Chips
1 teaspoon Coconut Oil or Extra Virgin Olive Oil
Toppings (optional):
1/4 cup White Chocolate Chips
1/4 cup Peanuts
1/4 cup Walnuts
1/4 cup Dried Rose Petals
1/4 cup Sesame Seeds
Let's Get Dipping
1. Melt milk chocolate with Coconut Oil or Extra Virgin Olive Oil in the microwave for 30 seconds, stirring every 10-15 seconds to prevent it from burning. You can also use the double-boiler method.
2. Dip each Dried Apricot in the melted chocolate. You can dip some entirely or half way. Place in tupperware or baking tray lined with parchment paper.
3. Add your toppings! We added drizzled white chocolate, crushed walnuts and peanuts, dried rose petals, and sesame seeds.
The easiest 2-minute dessert you will be making on repeat since it's that good and so delicious!
Notes
1. Storage: Can be stored in tupperware container in the fridge for up to one week.
2. Variations: Swap the milk chocolate, for white chocolate or peanut butter! Swap any of the toppings to something you like or of your dietary choice!
