Rose Date Bites (aka Ladoo)

Day 6 of my 30 Days of Healthy-ish Desserts brings you these no-bake Rose Date Bites or Ladoos, perfect for Diwali or as a guilt-free midnight snack. Made with Medjool dates, cashews, almonds, and a touch of fragrant rose water, these bites are both nutritious and flavorful - and 3 grams of protein in each bite! 


Get creative and involve your family or toddlers in rolling them into balls and coating them in dried rose petals. 


Ready in under 10 minutes, this is a sweet treat you can enjoy anytime

Rose Date Bites (aka Ladoo)

Yield: 9-10 medium balls
Prep Time: 10 minutes
Cook Time: 0 minutes
Total Time: 10 minutes

Ingredients & Utensils

Food Processor or Blender 


12-15 Medjooled Dates (medium sized, depitted)

1/2 cup Cashews 

1/2 cup Almonds 

2 teaspoon Rose Water Essense (and a little extra for the dried rose petals)

1 cup Dried Rose Petals 


Let's Get Cooking

1. To a food processor or blender, combine Medjooled Dates, Cashews and Almonds into a coarse mixture. 


2. Add Rose Water Essense, turn on the food processor or blendar again and until the mixture starts to clump together around the blade. 


CTD Tip: If yours is not clumping together, add more Rose Water Essense, one teaspoon at a time. See the notes section for alternatives to Rose Water Essense.  


3. Roll into individual balls. At the CTD headquarters, we were able to make 9 medium sized balls or ladoos.


CTD Tip: This is the perfect time to get toddlers or family/friends invovled!  


4. To coat the balls in the dried rose petals, first wet the date balls in the extra reserved Rose Water Essense. Then, roll on a plate with dried rose petals. 


5. Leave in fidge to chill and enjoy as a sweet healthy-ish dessert for Diwali or even a guilt-free midnight snack!

Notes

1. Storage: Store in tupperware or glass container in the fridge for up to one week. Batch make this and store in freezer for up to one month. 


2. Substitutions: If you don't have Rose Water Essense, simply use regular water. 


3. Variations: Want more sweet? Add some maple syrup, chocolate chips or even gulkand into the mixture in the food processor or blender before rolling into individual balls.
